Chicken Bhuna masala is a semi gravy chicken dish and it's very yummy to taste and easy to make and at the same time it is a treat for spice lovers.
In this spicy chicken recipe various spices gets mixed with chicken and give a very yummy and mouth watering taste.
You can keep water to minimum and can have this dish as a starter else you can have it as a main course recipe.

Ingredients for Chicken Bhuna Masala

  • 1/2 kg medium / big cut chicken with bone.
  • 1/2 cup of chopped onion.
  • 2 cloves of garlic.
  • 1/2 inch ginger.
  • 3 Tablespoons of curd.
  • Whole spices (2 Teaspoons of coriander seeds, Half Teaspoon of fenugreek / methi seeds, 1/2 dry red chilli, 8 - 1/20 black peppercorns).
  • 1/2 Teaspoon of turmeric powder.
  • 1/2 Teaspoon of red chilli powder.
  • Salt and sugar.
  • 3-4 Tablespoons of mustard oil.
  • Warm water.
  • Some chopped coriander leaves.

  • Take all the whole spices dry roast them for two to three minutes depending on your burner flame till they start releasing the aroma and also ensure that you are not
  • burning them
  • Once they start releasing their aroma switch off the flame and put them into a mixer grinder and grind it to a fine powder
  • After grinding keep it aside till further usage
  • Now heat oil in a pan or wok that means kadai
  • Once heated add green chilli and let them fry for few seconds.
  • Add Ginger Garlic paste and onion paste and give it a good mix.
  • After mixing let them cook for few minutes till the raw smell of everything goes away.
  • Once the raw smell goes away add the powdered spices, salt, sugar and our roasted spice powder
  • Give it a good mix also add very little amount of water to prevent burning.
  • After mixing let it cook for 4 to 5 minutes depending on your burner flame and do it on low flame and please note that we are doing everything on low flame till now also stir it couple of times in between so that whole masala gets cooked well.
  • Now add and curd mix it.
  • After mixing well let it sought for 1 minute.
  • Add chicken pieces coat the chicken pieces well with the masala.
  • After mixing the chicken pieces well in the spices let them cook for few minutes on low heat or low medium heat for 8 to 10 minutes depending on your burner flame.
  • There is no need of adding water as of now as chicken pieces will  release its own water
  • but after relaing the water if it becomes too dry then sprinkle some water and also stir couple of times in between.
  • Once Chicken Pieces has release all of its water then add a glass of warm water. Give it a mix now cover the pan or the wok and let it cook for ten to twelve minutes on low flame.
  • Open the cover and check the tenderness of the pieces if chicken pieces are tender enough that's fine otherwise if needed add some more water and again cover the wok or pan and let
  • them cook till chicken pieces are almost tender.
  • Now cook the chicken in open till the gravy is thick.
  • Once the gravy is thick as per your requirement add some coriander fresh leaves, save some to garnish now give it a mix and switch off the flame.
  • Now we will transfer our chicken bhuna masala in the serving dish.
  • Here is our chicken bhuna masala ready to eat. Garnish it with some fresh coriander leaves.
  • Here is our chicken Bhuna masala ready to eat and serve enjoy it with roti, chapati or white rice.

  • Once the gravy is thick as per your requirement add some coriander fresh leaves, save some to garnish.
