Gajar ka halwa (Hindi: गाजर का हलवा; Bengali: গাজরের হালুয়া), also called as gajorer halua or Gajrela is a carrot-based sweet dessert pudding from Indian subcontinent. This sweet dish is made by placing grated carrots in a pot containing a specific amount of milk and sugar and then cooking while stirring regularly.
It is often served with a garnish of dry fruits like cashew nuts, almonds and pistachios.

Carrot Halwa or Gajar Halwa is traditionally eaten during all festivals in India, mainly on occasion of Diwali, Holi, Eid al-Fitr and Raksha Bandhan. This halwa is mostly loved and tastes heavenly when served hot during winter.

Ingredients for Gajar Ka Halwa

  • 3 Carrots / Gajar
  • Dry Fruits like raisin(kishmish), cashew nuts(Kaju) for garnishing
  • 2 tbsp clarified butter (Ghee)
  • Milk 1 Glass
  • Milk Powder one small packet (27 gram)
  • Sugar

Recipe Steps for Gajar Ka Halwa

  • First peel carrots(Gajar) and then grate the carrots.
  • After grating the carrots keep them aside till further usage.
  • Take a pan and heat the pan.
  • Add clarified butter (Ghee).
  • Once Ghee (clarified butter) melts or hot add grated carrot into the pan.
  • Mix carrot well with the ghee.
  • Keep the flame on low else carrots will burn.
  • Keep it on low flame for 5 to 10 minutes. Keep stirring few times in between to prevent burning.
  • Add milk in the pan.
  • Mix the milk well.
  • Let it cook for sometime.
  • Now add sugar. We are adding around 1/2 small bowl of sugar. Mix it well.
  • Add milk powder now.
  • Mix the milk powder well.
  • Cover the pan and let it cook till the milk is absorbed completely by carrrots. We will open it after 15 minutes and will see if our Gajar Halwa is ready.
  • Open the cover and check if carrots have aboserbed the milk completely.
  • Transfer it to the serving bowl.
  • Garnish it with dry fruits like raisin(kishmish), cashew nuts(Kaju)
  • Serve it and enjoy the delicious and yummy Gajar ka halwa (Carrot Halwa).
