Chicken Vindaloo or Chicken Vindalho is a Goan Chicken Curry or Goan Chicken Gravy with a little bit of spiciness. It is sometime also referred as Konkani Chicken Curry or Konkani Chicken Gravy. Here we tried to make this dish in restaurant style and the result was pretty good.Though from the first look it looks a bit spicy but believe me this dish is not so spicy, this is in fact very yummy and tasty and gives you a nice break from normal chicken curry. I suggest you to please try it at home once and you will like it. You can enjoy this main course dish in lunch or dinner along with Roti, Chapati or Rice.
Ingredients for Chicken Vindaloo
Chicken - 750 g(cut into chunks, Increase or decrease quantity as per your requirement)
Garam masala - 1/2 tbsp
Ginger Garlic paste - 2 tbsp
Salt - as needed
Oil - 3-4 tbsp
Green Chilli - 1-2 (Chopped)
To Grind
Fried Onions - 1 cup (one chopped onion which we will fry)
Vinegar - 100 ml
Grated coconut - 1/2 cup
Dry red Chillies - 5-8 (or use chilly powder as needed) [Kashmiri Chilli is preferred]
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Coriander seeds - 1/2 tsp
Cinnamon stick - 1 small piece
Cloves - 3
Recipe Steps for Chicken Vindaloo
In a pan add 3-4 tbsp edible oil.
Once heated, add chopped onions.
Fry till onions start to brown.
Sprinkle very little salt to make process faster.
Now switch on the heat and tomato in remaining onions.
Cook on low medium heat for at least 2 minutes.
Add green chilli.
Cook for 30 seconds.
Add grinded masala/paste.
Add Salt.
Mix and cook for 40 seconds to 1 minute.
Add Chicken.
Leave the chicken to cook without cover till it lose it's
water or for around 6-8 minutes.
Every 3-4 minutes ensure it is not sticking to the base.
Now add water as per your gravy or around 1
glass .
Cover the chicken and leave it on low medium
heat for 15-18 minutes.
Every 6-8 minute ensure it is not sticking to the
base.
Open the cover.
Check the pieces are tender enough.
If not then cover it for some time or more and
then check again after some time.
Repeat till the process are tender.
If pieces are tender.
Add water if you need more for gravy.
Cook for 1 more minute.
Add Garam masala.
Mix well and cook or 2 more minute.
Serving Chicken Vindaloo
Now transfer the dish to serving bowl.
Garnish it will little fresh coriander.
Enjoy with Roti, Naan (Indian bread) or Rice.
